These healthy no bake treats are a great one to prep on the weekend to have on hand throughout the week. They’re easy to make, and can be stuffed with your favourite nuts (walnut, cashews, peanuts). How long do stuffed dates last?
Dates can stay fresh in the freezer for a long time. Refrigerate stuffed dates up to 5 days, or freeze in air tight containers/bags for up to a month.

What can I stuff dates with?
Whatever you wish! Nuts make the stuffed dates a bit more healthy. Walnuts are a great option to pair with the dates. Cashews and peanuts also work!

Which date is best to use for stuffing?
Because of their soft texture and unique sweet flavour, Medjool dates work best to stuff for later. But other types of dates can be stuffed too. Make sure they’re soft enough to be bent (to handle the stuffing).

These healthy no bake treats are a great one to prep on the weekend to have on hand throughout the week. They’re easy to make, and can be stuffed with your favourite nuts (walnut, cashews, peanuts). Make as many of these chocolate peanut butter dates as you want, and freeze them in air tight containers to snack on later!

Ingredients

  • Medjool dates

  • Peanut butter

  • Chocolate chips (or chunks) + coconut oil to melt

  • Nuts (walnuts / cashews / peanuts)
    To garnish: rose petals, shredded coconut, seeds, etc.

Directions

  • Make a slit with a knife. Remove the pit/seed.
  • Stuff with peanut butter. Push down walnuts, cashews, or peanuts. Cover with more peanut butter. Squeeze to close off the date.
  • Place on parchment paper in sheet pan. Repeat for all the dates. Freeze for 15 minutes.
  • Make chocolate ganache. Melt chocolate chips/chunks in a bowl with coconut oil – use double boiler method (See Notes), or in microwave stirring every 30 seconds.
  • Allow to cool for 5 minutes before dipping each stuffed date in the melted chocolate. Drain then place back on parchment paper. Garnish with rose petals, shredded coconuts, or keep it plain.
  • Freeze again for another 15 minutes.
  • Store in air tight containers / freezer bags. Keep in freezer for up to a month.

Notes

  • Double boiler method: place a saucepan over medium heat. Add water (somewhat halfway), add a heat-proof bowl on top (to make sure it’s not touching the water). Bring to simmer, then lower the heat. Add the chocolate with a little coconut oil. Stir to melt down.
