Curly Sweet Potato Rolls

Sweet potatoes…it’s such a versatile vegetable, you could make so much with it! From curries, fries, to stuffing them, and more!

Here’s a fun take on sweet potatoes! Roll them!

Coated in a rich and herby sauce, and baked to crispy tops and tender bites.

It’s the perfect party dish, and it’s great for a potluck. Have these rolls as a side/appetizer, along with whatever else is being served. Since gatherings are still restrictive and limited, that means you get to have even more of those!

There are only 10 ingredients for this recipe, and it is ready in under 10 steps! Although it takes about an hour in the oven to get done, it only requires about 15 minutes of prepping time (not counting the soaking time). But I promise you, the end results are worth it!

Here’s what you’ll need:

  • Olive oil
  • Garlic
  • Green Onion
  • Chives
  • Parsley
  • Greek seasoning
  • Onion powder
  • Ginger powder
  • Salt
  • Pepper

Slice down the potatoes vertically as thin as possible. Soak them in hot water in a large bowl for 30 minutes to soften.

Whisk the remaining ingredients in another large bowl.

Drain the sweet potato slices and pat dry with paper towel, then return back to the bowl. Drizzle with the seasoning/sauce and toss around to coat well.

In an oven-safe dish, roll each sweet potato slice (folding it twice), and place it while pressing around the edges using a heavy mug – this helps keep things in place. Drizzle the remaining sauce (left at the bottom of the bowl).

Bake at 400 F | 205 C for 45 minutes – middle rack. Set the oven to broil (high), and move the dish up to top rack – 10 to 15 minutes. Remove from oven, garnish with more parsley, chives, and green onion. Serve immediately.
